1. Rinse thoroughly before cooking.
2. Place 80g beans in 500ml water and bring to the boil.
3. Boil for 10 mins.
Reduce the heat and simmer for 60 mins, softened with a slightly firm bite.
4. Drain, rinse and use as required.

Black Turtle Bean Chilli
Serves 4
Ingredients
- 100g Black Turtle Beans
- 1 tbsp vegetable oil
- 3 red onions, diced
- 1 red and 1 green pepper, deseeded and sliced
- 1 tsp chilli powder
- 1 tsp ground cumin
- 1 garlic clove, crushed
- 400g can chopped tomatoes
- 1 tbsp tomato ketchup
- 200ml vegetable stock
- 1/2 can red kidney beans
- Salt & black pepper
Method
1. Cook the black turtle beans to the on pack instructions, drain and set aside.
2. Heat the oil in a large saucepan.
Add the onions and cook for 5 mins on a low heat.
3. Add the red and green peppers, chilli powder, cumin and garlic, cook for a further 5 mins.
4. Stir in the tomatoes, ketchup, stock, cooked black turtle beans and kidney beans, bring to the boil.
5. Reduce the heat, season to taste and simmer for 10 mins.
Delicious served with rice and a dollop of sour cream.
