Cooking guidelines
Oven cook - From Frozen. Needs cooking. Remove all packaging. Preheat oven.
Electric 200°C, Fan 180°C, Gas 6, 4 hours 20 mins
Drizzle oil over shin and season with salt and pepper. Place into a deep oven proof dish and sear for 20 mins in the oven. Remove from oven and cover meat in stock/water and cover with tin foil.
Reduce oven temperature and cook for a further: 4 hours
Slow Cook
Electric 160°C, Fan 140°C, Gas 3, 5 hours
After 2 hours, check that meat is covered in liquid, add more liquid if required to cover meat and cook for a further 2 hours until tender.
Remove all packaging. Turn slow cooker on medium/high heat.
Place meat into slow cooker and add stock until meat is covered.
Place the lid on top and cook until tender.
During cooking add more liquid if required to ensure meat is covered.
Check the seasoning and serve.
Do not reheat.

Beef Shin in Red Wine

Ingredients
1 Pack of frozen M&S Beef Shin
2 Brown Onions - finely chopped
3 Celery Sticks - finely chopped
1 Carrot - finely diced
6 Garlic Cloves - finely chopped
750ml Red Wine
4 tbsp Tomato Purée
150ml Beef Stock
1 tbsp Olive Oil
Salt & Pepper seasoning
5-6 Potatoes or 250g Pappardelle
Method
1. Preheat the oven to Electric 180ºC / Fan 160°C / Gas mark 4. Add 1 tbsp of oil to a frying pan, season the Beef Shin. Over a high heat add the Beef Shin, brown all over [Approximately 5-10 mins]. Place into a deep casserole dish.
2. Cook the onions, celery, carrots and garlic for 10 mins or until softened, stirring occasionally. Add to the casserole dish.
3. Add the wine, tomato purée and the beef stock to a saucepan. Simmer for 5 mins, stirring occasionally.
4. Add to the casserole dish and cover with a lid. Place in the preheated oven and cook for 4 hours until the meat starts to fall apart.
5. Pull the meat into chunks [discard the bone and remove the fat if desired]. Serve with pappardelle or potatoes.
