2-3 mins
- Preheat oven
- Remove all packaging, including the pad, but leave the string in place
- Allow the product to rest at room temperature for 30 mins before cooking
- Lightly oil and season the surface of the meat
- Sear all over in a hot frying pan
- Transfer to a roasting tin and place in the centre of the preheated oven for desired cook time

Electric 220°C / Fan 200°C / Gas 7
Rare: 20-25 mins
Medium: 25-35 mins
Well done: 35-45 mins
- Remove from the oven and loosely cover with foil
- Allow to rest for 10 mins
- Remove the string once cooked
- Carve thinly into 10mm slices
Do not reheat.
