Cooking guidelines
Hob - From Ambient. Serving size: 30g per portion/80g when cooked
25 mins for 2 servings
1. Rinse the bulgur wheat.
2. Bring 250ml water to the boil. Add 60g bulgur wheat.
3. Stir, cover and simmer for 15 mins, until most of the water has been absorbed.
4. Drain and stand for 10 mins.
5. Separate grains with a fork and use as required.
Do not reheat
Tip: Mix with paprika, cumin and peas and stuff in peppers for a classic warning dish.
25 mins for 2 servings

Recipes
Bulgur Falafel
Serves 4
Ingredients
- 60g Bulgur Wheat
- 2 small potatoes, peeled and chopped
- 80g breadcrumbs
- 1 small parsley bunch, chopped
- 1 small mint bunch, chopped
- 1 onion, finely chopped
- 3 tbsp tomato, garlic & herb paste
- 2 tsp ras el hanout
- 3 tbsp olive oil
- Salt & pepper to taste
- Pitta bread, lettuce, and sliced tomatoes, to serve
Method
1. Cook the bulgur wheat according to the cooking instructions.
2. Boil the potatoes in salted boiling water for 8 minutes. Drain and allow to cool.
3. In a blender or food processor, combine potatoes, tomato paste, bulgur wheat, breadcrumbs, fresh herbs, onion and ras el hanout.
4. Pulse until almost smooth. Season with salt and pepper. Mould into 16 balls.
5. Heat the olive oil in a large frying pan and cook the falafels for 3-4 minutes on each side until golden and crisp.
6. Serve immediately in a warm pitta bread with lettuce and sliced tomatoes.
