Preparation and Usage
Preparation
Serving Size: 40g per portion 80g when cooked Hob 1hr 25 mins For 2 servings
1. Soak 80g dried chickpeas in water overnight. Drain and rinse thoroughly.
2. Place 80g of chickpeas in 500ml water and bring to the boil.
3. Boil for 10 mins.
Reduce the heat and simmer for 75 mins until softened with a slightly firm bite.
4. Top up with water as needed.
5. Drain, rinse and use as required.
Do not reheat.

Houmous
Serves 4
Preparation Time: 5 mins
Cooking Time: approx. 93 mins
Ingredients:
- 200g Soaked Chickpeas
- 1 Lemon, juiced
- 4 tbsp Olive oil
- 4 tbsp Cold water
- 1 1/2 tbsp Tahini
- 1 Garlic Clove, Crushed
- 1 tsp Ground cumin
- Salt and pepper to taste
Method:
1. Soak 100g of dried chickpeas in water overnight.
2. Add 100g of the soaked chickpeas to 500ml of water and bring to the boil.
3. Boil for 10 mins. Reduce heat and simmer for 75 mins, or until softened with a firm bite.
Top up with water as needed.
4. Add all of the ingredients and the cooked chickpeas to a food processor, blitz for 3 mins until smooth, or to reach your desired consistency.
5. Serve with a sprinkle of ground cumin.
To Serve:
Serve with pitta bread.
