This tender and crowd-pleasing British rump roast has been matured for 21 days and tumbled in an earthy porcini mushroom and black pepper seasoning to give it even more rich, umami flavour.
Enjoy with lashings of melted duxelles butter - a perfect pairing of punchy horseradish with earthy chestnut, closed cup and porcini mushrooms.

NEEDS COOKING
OVEN 22-35 mins per 500g
ELECTRIC 200°C / Fan 180°C / Gas 6
• Preheat oven.
• Remove all packaging, except for strings and place butters to one side for later use.
• Leave to rest at room temperature for 10 mins.
• Place joint onto a lined ovenproof tray.
• Cook on middle shelf for:
Rare 22 mins per 500g
Medium 30 mins per 500g
Well done 35 mins per 500g
• Baste joint at regular intervals.
• 5 mins before joint is cooked based on your preference, remove from oven, discard juices and place butters on top of joint, return to oven.
• Remove from oven, lightly cover with foil, and leave to rest for 15 mins.
• Remove strings after cooking.
• Carve and serve.
