Boneless rind-on gammon joint made with British outdoor-bred pork, dry-cured to maturity and air-dried for added flavour, giving it a succulent texture and a crackling finish. Garnished with a bay leaf. Simply roast in the oven.

Preparation and Usage
Carving
1. Secure a large chopping board by placing on top of a damp cloth.
2. Using a pronged carving fork, place the joint onto the carving board.
3. Secure the joint by pushing the fork through the centre of the joint from above and hold firmly.
4. Slice using a sharp knife.
5. Only carve as many slices as required to preserve the succulence and tenderness of the joint.

Instructions
Oven cook - From Chilled. Handling Raw Meat Safely: This product contains raw meat and must be cooked according to the cooking instructions.
Electric 200°C, Fan 180°C, Gas 6, 30 mins per 500g + 30 mins
Needs cooking. Preheat oven. Remove all packaging and strings from the gammon. Weigh the gammon joint to establish cooking time. Loosely cover the bottom and sides of the joint with foil, leaving the rind exposed. Place the joint on the rack of a foil lined roasting tin. Place on the middle shelf of oven. Cook for 30 mins per 500g. Increase the oven temperature to:
Electric 220°C, Fan 200°C, Gas 7
Cook for a further 30 mins. Remove from the oven.
Use a knife to remove the crackling from the joint before carving. Check that the product is thoroughly cooked.
The product is best carved after resting for 15 mins.
Do not reheat.

Excellent crackling gammon
This was really good, not too salty and very flavoursome. Achieved perfect crackling easily. Really hope this is available again next year, or better still, all year! I would definitely purchase again.

I sous vide this at 140 degrees for 5 hours. Best ham I’ve ever had.

Poor quality but good taste
Taste was OK, however I ended up with the poor quality end piece of meat and was dry and flat. Very disappointed.
