Wagyu rump of beef
Widely regarded as some of the finest meat in the world, we've expertly butchered and matured our British Wagyu beef for a minimum of 30 days to develop its intense depth of flavour and unrivalled, buttery texture.
This wonderful Wagyu rump joint offers ultimate succulence with characteristically intense fat marbling, for melt-in-the-mouth tenderness. It's finished with a flavoursome butter, mustard and bone marrow which melts into the meat as it cooks.
This product has been specially vacuum sealed to ensure freshness and eating quality. When the pack is opened you may notice the colour brightening and a faint aroma naturally associated with this technology will quickly disappear.

Preparation and Usage
Handling Raw Meat Safely: This product contains raw meat and must be cooked according to the cooking instructions.
Fry + oven 40-53 mins
Needs cooking. Remove all packaging (including absorbent pad) 30 mins before cooking. Set butter to one side. Preheat oven and baking tray. Oil and season surface of the meat.
Fry 2-3 mins
Preheat dry pan to high, until smoking hot. Add the joint to the hot pan and sear all surfaces until golden brown.
Transfer to a preheated baking tray. Place in the centre of the oven, cook for:
Electric 200℃
Fan 180℃
Gas 6
Rare 33 mins
Medium 37 mins
Well done 45 mins
Remove joint from oven, add butter to the top of the joint and cook for a further 5 mins. Baste the joint frequently throughout cooking. Remove from oven, cover with foil and rest for 15 mins before carving. Do not reheat.
Carving
For best results, carve thinly using a sharp knife.
1. Secure a large chopping board by placing on top of a damp cloth.
2. Using a pronged carving fork, place the joint onto the chopping board with the fat to the bottom.
3. Secure the joint by pushing the fork through the centre of the joint from above and hold firmly.
4. Remove string throughout carving.
5. Slice thinly into 5mm/10mm slices using a sharp knife.
6. Only carve as many slices as required to preserve the succulence and tenderness of the joint.
7. For best results carve and drizzle with butters and juices from roasting tray.
Oven cook - From Chilled. Needs cooking
Electric 200°C / Fan 180°C / Gas 6

- Preheat oven
- Transfer the joint to a preheated roasting tray and place in the centre of the oven
- Baste the joint frequently throughout cooking
- Remove, cover with foil and rest for 15 mins before carving
Do not reheat.
To carve:
- Push the fork through the centre of the joint
- Transfer to a secure chopping board
- Slice the meat across the grain into 5mm slices
- Remove the strings throughout carving
- Drizzle the remaining juices over the meat
