Recipes
Chicken & chorizo paella
Serves 4
Ingredients:
1 Litre hot chicken stock
1 Pinch saffron
3 Tbsp olive oil
4 Chicken breasts, diced
200g Chorizo, chopped into 1cm chunks
2 Small onions, finely diced
2 Garlic cloves, finely chopped
1 Red pepper, cut into strips
400g Bomba paella rice
400g Tinned tomatoes
1 tsp Smoked paprika
25ml Sherry vinegar
100g Peas
Chopped flat leaf parsley
1. Add the saffron to the hot chicken stock and set aside to infuse.
2. Heat the olive oil in a large pan over a medium heat. Add the diced chicken and chorizo and cook for 5 mins until browned, then remove and set aside.
3. Add the diced onion to the pan and cook for 5-7 mins until starting to soften.
4. Add the chopped garlic and red pepper and cook for 5 mins further.
5 Stir in the Bomba Paella rice, tinned tomatoes, smoked paprika, sherry vinegar and the saffron infused stock.
6 Cook over a medium heat for about 25 mins.
Shake the pan occasionally, but don't stir!
7 Once the rice is almost cooked, add the chicken & chorizo back into the pan and cook for a further 5-10 mins until the chicken is cooked through.
8 Stir in the peas and heat for 1-2 mins.
9 Garnish with chopped parsley and serve.
Do not reheat.
