Preparation and Usage
Carving
1. Secure a large chopping board by placing on top of a damp cloth.
2. Using a pronged carving fork, place the joint onto the carving board.
3. Secure the joint by pushing the fork through the centre of the joint from above and hold firmly.
4. Slice using a sharp knife.
5. Only carve as many slices as required to preserve the succulence and tenderness of the joint.

Cooking guidelines
Oven cook - From Chilled. 1 hour 20 mins
Electric 240°C, Fan 200°C, Gas 9
Needs cooking. Remove gammon from the bag for up to 30 mins before cooking and place onto a lined baking tray. Pat the rind dry with paper towel. Massage a little oil and half a teaspoon of salt into the rind and scoring. Place on the middle shelf of the oven and cook for 30 mins. Reduce the temperature.
Electric 220°C, Fan 200°C, Gas 7
Cook for a further 50 mins.
Remove from the oven. Allow to rest for 10 mins before carving.
Carefully remove the strings.
Use a knife to remove the crackling before carving. Check that the product is thoroughly cooked.
Do not reheat.
For extra crispy crackling
Electric 240°C, Fan 220°C, Gas 9 10 mins
Whilst the joint is resting, remove the strings, then carefully remove the rind from the joint and return the rind to the oven on a baking tray for a further 10 mins, or until bubbling and crisp.
