Cook from frozen.
400g cranberries
100g light muscovado sugar
100ml orange juice, plus the zest from 1 orange
Optional
1-2 Star anise
1 Cinnamon stick
60-80ml port
Melt sugar into orange juice & zest on a low heat.
Add the frozen cranberries, turn the heat up and simmer for 5-10 mins until the cranberries start to breakdown and the juice becomes your preferred consistency.
Please note the juice will thicken as it cools. For an added Christmassy feel add the star anise & cinnamon stick with the cranberries and a splash of port at the end of cooking.
