- Rehydrate before use.
- Cover with boiling water and leave for 20 minutes.
- Drain and pat dry to remove excess water.
- Use immediately.

You can stir this versatile sauce through tagliatelle and serve it garnished with fresh parsley - it tastes great with steak and chips as well.
Porcini Mushroom Sauce
Ingredients
1 tbsp oil
1/2 onion, finely sliced.
1 clove of garlic, finely chopped
25g mushrooms, soaked and chopped
50ml white wine
100ml double cream
1 tbsp parmesan cheese, grated
Why not try:
In mushroom pasta and risotto. Mixing with button mushrooms for mushrooms on toast. In Bolognese and ragus. In soups, stews and pies.
Method
Heat the oil in a frying pan and fry the onion and garlic until soft, then add the chopped porcini mushrooms and cook for another 3-4 min. Pour in the white wine, reduce by a third, then add the double cream and bring to a simmer for 5 min before mixing in the Parmesan.

broke the blade on my food processor
A recipe called for blitzing dried mushrooms, I heard a thud and realised the blade from my machine had broken off. Two of the mushrooms were as hard as stones and had completely dislodged the blade

Look beautiful, taste super, minimal packaging.
Much better looking than the ones in a plastic jar (beware, the jar is made to look like glass but it is not), almost worthy of an instagram picture. I have never seen mushrooms sliced and dried so beautifully. I may have gotten lucky, but I will order these again. Two packs.
