Preparation and Usage
Tip: Cook in a little veg stock and then stir through some toasted nut and dried fruit and a side for a tagine.

Hob - From Ambient. Serving size: 35g per portion/80g when cooked

1. Bring 500ml water to the boil, add 70g couscous.
2. Boil for 6-8 mins until softened with a slight bite.
3. Drain, rinse, and use as required.

Couscous Caprese Salad
Serves 2
Ingredients
- 100g Giant Couscous
- 1 tbsp Olive Oil
- 1 tbsp Balsamic Vinegar
- 125g Cherry Tomatoes
- 150g Vine Tomatoes
- 75g Mozzarella Cherries
- Zest of 1 Lemon
- Salt & Pepper, to taste
- Large handful Basil Leaves, torn into smaller pieces
Method:
Preheat the oven to 200°C (Fan 180°C), Gas Mark 6.
1. Cook the couscous using on pack instructions. Drain and allow to cool.
2. Tumble tomatoes in the oil and balsamic vinegar before spreading onto a baking tray.
3. Roast for 25 mins until slightly charred. Remove from the oven and set aside to cool.
4. Combine couscous, lemon zest, mozzarella, tomatoes and basil leaves and stir.
Season and serve warm or cold.
