Cheesy Polenta
Serves 4

Serve with a tomato based ragu or casserole instead of pasta or mashed potato.

1/4L Whole Milk
1/2 tsp Salt
200g Polenta
50g Butter
100g Grated Parmesan Cheese
Cracked Black Pepper to Taste

Method
1. Bring the milk and salt to a simmer in a large heavy bottomed saucepan.
2. Gradually sprinkle the polenta into the pan while continually whisking.
3. Turn the heat down to a low heat. Cover and continue to cook for 15 - 20 mins or until it's thick and fluffy. Stir occasionally to avoid burning.
4. Remove from the heat, stir in the butter and cheese. Add cracked black pepper to taste.
5. Serve warm and sprinkle with some extra cheese if desired.
