Almond cheesecake
Makes 6
Individual desserts in a glass a truly impressive dessert.
250g Amaretti biscuits
50g Unsalted butter
400g Cream cheese
300ml Double cream
125g Golden caster sugar
2 tbsps Amaretto (or 1tsp almond extract)
150g Salted caramel
25g Toasted flaked
Almonds for garnish (optional)
Almond cheesecake
Method
1. Blitz amaretti biscuits in a processor until fine, melt butter in a saucepan and combine.
2. Divide half the crumb between 6 glasses then drizzle 4 of the salted caramel around the glass over the biscuits and chill in the fridge.
3. In a bowl, stir together the cream cheese, sugar and amaretto/almond extract. In a separate bowl, whip cream until it forms stiff peaks and combine with the cream cheese mixture until smooth.
4. Evenly divide mixture into the six prepared glasses. Top with the remaining biscuit crumb and finish with the remaining salted caramel sauce and toasted flaked almonds (if using).
5. Return to the fridge to chill for at least one hour.
6. Garnish with a whole amaretti biscuit before serving.
