Recipes

You Will Need:
- 1 Keralan Curry Kit
- 10g Butter or Ghee
1 Tbsp Oil
- 250g White Fish, 3cm Diced
- 150ml Water
Method:
1. Heat the oil in a large frying pan on a medium-high heat and add the ghee base paste, turn down the heat and cook for 8 minutes, stirring occasionally.
2. Turn up the heat a little and add the Keralan curry sauce and cook for 3 minutes. Add 150 ml of water and cook for a further 3-5 minutes.
3. Add the fish and cook for a final 4 minutes or until the fish is cooked through.
4. Meanwhile, heat the butter or ghee in a separate frying pan. Add the whole Keralan spices and lightly cook until the spices start to pop. Then drizzle over the finished Keralan curry and serve.
Optional: Sprinkle over some freshly chopped coriander.
Simple swaps: Replace fish with prawns. Add in at step 3.
