Best roasted, these King Edward potatoes are a source of potassium, Vitamin B6 and thiamine. Peel and cut into evenly sized pieces, before boiling. Baste with oil and roast in the oven until golden.

Preheat some oil in a roasting tin. Spread potatoes evenly in roasting tin and baste. Roast uncovered.
Electric 220°C, Fan 200°C, Gas 7, 40-50 mins
Turn once during cooking or until golden.
