Shopping List: Lemon & Herb Risotto
- 2 salmon fillets
- 1 white onion, finely diced
- 300g Arborio risotto rice
- 1 lemon, juice & zest
- 225g peas, defrosted if frozen
- Grated Italian hard cheese and chopped parsley to garnish (optional)
Cooking Instruction
1. Cook the salmon according to packet instructions.
2. Heat 2 tbsps of oil in a non-stick pan with a lid on low to medium heat.
Soften the onion for 5 minutes, ensuring it does not go brown.
Meanwhile, add the seasoning paste to 850ml of boiling water in a jug.
3 Add the rice and the stock to the pan and stir well. Cover the pan and cook for 15 minutes on a low-medium heat, until the rice is nearly cooked and most of the stock is absorbed, stirring occasionally.
4. Add the peas, stir and cook for a further 2 minutes.
5. Remove from the heat, stir through the lemon juice. Divide into 4 bowls and top evenly with salmon and lemon zest, Garnish with grated Italian hard cheese and parsley, if desired.
Why not try... replacing the salmon with cooked chicken or pan-fried prawns or make it vegan using sautéed mushrooms or butternut squash.
