Shopping List: : Middle Eastern Style Tray Bake
- 4 Skinless chicken breasts, cut into 3cm chunks
- 1 Red onion, cut into 8 segments
- 1 Red bell pepper, cut into 3cm chunks
- Greek yogurt, sliced cucumber and fresh lemon slices to garnish (optional)
Cooking Instruction
Preheat oven to Electric 220°C, Fan 200°C, Gas 7.
1. Mix the chicken, red onion and red bell pepper with 2 tbsps of oil and the seasoning paste.
2. Place on a lightly oiled baking tray and bake in oven for 15-20 minutes until the chicken is thoroughly cooked through and the juices run clear.
3 Serve with a drizzle of yogurt, sliced cucumber and a slice of lemon, if desired. Delicious served with buttered couscous.
Why not try... serving in a wrap or replacing the chicken with chickpeas and aubergine.
