Pad Thai Noodle Stir Fry
Serves 4
Ingredients
180g Rice Noodles, dry
1-2 Tbsp. Oil 300g Raw king prawns (or Chicken or Firm Tofu, sliced)
1 Jar Pad Thai Sauce
2 Eggs, beaten
100g Bean sprouts
4 Spring onions, finely chopped handful roasted peanuts, chopped (optional) wedge of lime (optional)
1. Prepare noodles as per pack instructions, drain, rinse under cold water, drain again, set aside.
2. Heat the oil in a large frying pan or wok on a medium/high heat, add the protein and fry until just cooked.
3. Add the paste and stir fry for a further minute.
4. Add the noodles, stir through until well combined.
5. Push the contents of the pan to one side, pour in the eggs, cook for 1 min and stir through the rest of the mix until well combined.
6. Add the beansprouts and spring onion and heat through.
7. Serve with a garnish of peanuts and wedge of lime, if desired.
