Makes 24
A family-favourite fridge cake that's simple to make and a great afternoon snack.
125g Soft Butter
300g 70% Dark Chocolate
3 tbsp Golden Syrup
200g Rich Tea Biscuits
125g Marshmallows
2 tsps Icing Sugar (for Dusting)
1. Melt the butter, chocolate and golden syrup in a heavy-based saucepan. Set aside 125ml of the mixture.
2. Break up the biscuits by placing them in a freezer bag, crush with a rolling pin until they're in crumbs and pieces.
3. Add the broken biscuits to the melted chocolate mixture in the saucepan and combine.
4. Add in the marshmallows, then pour the whole mixture into a 9-inch square tray.
5. Pour the saved chocolate mixture over the top and smooth the top.
6. Place the tray in the fridge.
7. Cut into 24 fingers and dust with icing sugar.
8. For an extra luxurious touch, add glacé cherries, cranberries, white chocolate chunks or roasted hazelnuts.
