Sweet Banana Bread
1kg Loaf or 12 Muffins
Enjoy this brilliant loaf with a warming cup of tea.
140g Plain wholemeal flour
140g Butter, softened, plus extra for the tin
140g Caster sugar
2 Large eggs, beaten
9g Baking powder
1 Tsp vanilla extract
2 Very ripe bananas, mashed
1. Heat oven to 180°C/Fan 160°C/Gas mark 4.
2. Butter a 1kg loaf tin and line the base and sides with baking parchment.
3. Cream the softened butter and the caster sugar until light and fluffy.
4. Slowly add 2 beaten large eggs with a little of the plain wholemeal flour.
5. Fold in remaining flour, baking powder, vanilla extract and the 2 mashed bananas.
6. Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through.
7. Cool in the tin for 10 mins, then turn out onto wire rack.
Alternative: To make muffins
Line a 12-hole muffin tin with paper cases and follow the recipe above. Spoon the mixture into the muffin cases and bake for 20-25 mins or until golden brown.
