Shopping list: Quesadillas
- 4 Skinless chicken breasts, cut into 3 cm chunks
- 1 Red onion, finely diced
- 150 g Cheddar cheese, grated
- 2 Red bell peppers, cut into 1 cm chunks
- 8 Tortillas
- Lime wedges and salsa to garnish (optional)
Cooking instructions
Preheat oven to Electric 160°C, Fan 140°C, Gas 3.
1. Heat 1 tbsp of oil in a large frying pan over medium heat.
Fry the onion for 3-4 minutes until soft, then add the chicken and cook for 5 minutes.
2. Add the seasoning paste and red bell peppers and mix well.
Cook for a further 5 minutes on high heat, checking the chicken is cooked thoroughly and any cooking juices are reduced.
3. Heat 1 tbsp of oil in a clean frying pan over medium heat. Place a tortilla in the pan, add a layer of grated cheese, then a layer of the chicken mixture and top with another tortilla, cook for 2 minutes.
4. Place a plate over the frying pan and flip the quesadilla over to cook on the other side for 2 more minutes. Keep warm in the oven whilst making the rest. Cut in quarters and serve alongside salsa and lime wedges, if desired.
