Instructions
Soak 100g soup mix in 500ml cold water for 8-12 hours or overnight. Drain and rinse thoroughly before cooking. Bring 500 ml of water to the boil, add soup mix. Boil for 10 mins and then simmer for 40 mins until tender. Drain well and use as required.
Do not reheat.

Ingredients
- 100g Quick Cook Soup Mix
- 1 Carrot, diced
- 1/2 Celery Stick, diced
- 1 Small Onion, diced
- 1 Garlic Clove, crushed
- 1 tsp Smoked Paprika
- 800ml Vegetable Stock
- 2 tbsp Tomato Purée
- 1 tbsp Oil
- Salt & Pepper, to Taste
Method:
1. In a medium saucepan, heat 1 tbsp oil.
2. Add the carrot, celery and onion and sauté for 5 mins until softened. Add the garlic and paprika and stir for a further 1 min.
3. Add the tomato purée and the veg and the stock. Bring to the boil and season to taste.
4. Add the quick cook soup mix and continue to simmer 15 mins until grains are cooked through.
Cooking Instructions
Serving size: 50g per portion/140g when cooked
Hob:15-18 mins for 2 servings
1. Bring 1l of water to the boil.
2. Add 50g per serving of the soup mix, reduce the heat and simmer for 15-18 mins.
3. Drain, rinse, and use as required.
Do not reheat
Tip: stir through creamy butternut squash soup for added texture.

Quick cook?
The name "Quick cook" is very misleading considering you need to either soak them for a day or cook for ages. Not so quick cook after all. Otherwise they are not bad.

The new quick cook version only contains 250g not 500g
So easy to use for Chicken Bone Broth
I wash half a bag in a sieve until water runs clear and soak overnight in more clean cold water, then add to the other soup ingredients and simmer for an hour. Perfect texture for broths especially chicken broth.

Makes delicious homemade broth No need to pre soak I just boil it with a ham shank for a couple of hours to make delicious stock remove the shank and add the ham from the bone back in along with some swede carrots and leeks and simmer until cooked
Good enough
Some negative experiences here about this product , I use it all the time and soak it overnight with a little bicarb of soda , rinse well before boiling 10 minutes then add to soup .Its a perfectly good soup mix in my opinion ,good mix of grains and reasonably priced .
Need to soak for days
I soaked for 2days then cooked in soup for over an hour but still not all soft have used before and still hard this is why I soak for longer spoils the meal
