Preparation and Usage
Tip: Serve with roasted beetroot, feta and rocket for a salad.
Cooking guidelines
Hob - From Ambient. Serving size: 30g per portion/90g when cooked
30 mins
For 2 servings
1. Rinse 60g quinoa in cold water.
2. Bring 300ml water or stock to a boil, add the quinoa. Stir, cover with a lid and reduce the heat to a simmer.
3. Cook for 20 mins until soft with a slight bite.
4. Drain and rinse. Allow to stand for 10 mins.
5. Separate the grains with a fork and use as required.
Do not reheat

For 2 servings

Salmon, Quinoa & Asparagus Salad
Serves 4
Ingredients
- 150g Quinoa
- 100g Asparagus, Trimmed and cut into 4cm lengths
- 50g Garden Peas
- 3 Spring Onions, finely sliced
- 25g Wild Rocket Leaves
- 2 x 160g pack Honey Roast Salmon, flaked
- 3 tbsp Lemon Juice
- 1 tbsp Extra Virgin Olive Oil
- Salt & Pepper
Method:
1. Cook the quinoa to the on pack instructions, drain thoroughly and set aside to cool.
2. Meanwhile, lightly steam or boil the asparagus and peas for 5-8 mins, then cool rapidly by plunging into cold water, drain well.
3. Gently fold the asparagus, peas, spring onions, rocket and salmon flakes into the quinoa.
4. Make the dressing by whisking together the olive oil and lemon juice, season with salt and pepper.
5. Spoon over the salad and serve.
