M&S Rainbow Cookie Baking Kit

Make baking even easier with our rainbow cookie baking kit. This bottle is filled with almost everything you need to make the cookies, including chocolate beans and colour sprinkles. All you need to add is butter and egg. Makes 20 cookies.

What you'll need: 1 bottle rainbow cookie baking mix, [160g very soft salted butter, 1 medium egg, 15ml milk, greaseproof paper, mixing bowl, wooden spoon.
To make a slab: 24 x 24cm baking tin
To make 20 cookies: 2-3 flat baking trays
Method: Preheat oven. Line the baking tin or trays with the greaseproof paper. Add all of the ingredients from the bottle into your mixing bowl (you may need to break up the sugar layer with the end of your wooden spoon to avoid lumps in the batter).
Pour the soft butter, egg and the milk into the mixing bowl and combine the mixture into a dough.
For the slab: Pour the mixture into the lined tin and smooth out evenly. Bake for 27-30 mins in the centre of the oven until lightly golden brown.
For cookies: Chill the dough in the fridge for 30 minutes. Break the dough into 3cm diameter balls. Place evenly spread on your baking trays (to allow room for the cookie to expand). Bake for 15-17 mins in the oven until lightly golden.
Cool on your tray before eating.
Do not reheat.
