Instructions
25 mins for 2 servings
1. Rinse 60g of lentils and place in 500ml water.
2. Bring to the boil for 10 mins.
3. Reduce the heat and simmer for 15 mins until the lentils have softened with a slight firm bite.
4. Drain, rinse, and use as required.
Do not reheat

Ingredients
- 200g Red lentils
- 1 Chopped Onion
- 2 Cloves Garlic, chopped
- 1/2 tsp Salt
- 1/2 tsp Chilli powder
- 1/4 tsp Ground turmeric
- 1 tsp Ground coriander
- 1 tsp Ground cumin
- 1 tsp Ground garam masala
- 3 Chopped plum tomatoes
- 1 tbsp lemon juice or tamarind paste
- 2 tbsp oil
- 400ml Water
Method
1. Heat oil on a low-medium heat and fry onion and garlic until golden brown.
2. Add cumin, coriander, chilli powder and turmeric, fry briefly until fragrant notes from spices are released.
3. Add tomatoes and salt and cover. Cook on a low heat until the oils are released from the tomatoes, and they are a deep red colour, will take approx. 15 mins.
4. Add in 400ml water and the lentils and cook for a further 20 mins, add a little more water if it starts to dry out.
5. Stir in garam masala and lemon juice (or tamarind) and cook for 2 mins more to finish off.

Disintegrates instead of cooking
Tragic as they taste very lovely, but no matter how little time you go for they refuse to hold their shape once cooked. Taste perfect but barely able to strain as they all just fall apart - very weird.
Great for soups or curries
Big fan of lentils so versatile boil them up with stock and they break down easily to make a fine soup or add a bit of curry powder for a nice dhal .

Perfect for soups and stews.
I like these and use them in my home made soups and stews, they have a sweet, nutty flavour. I prefer to soak them overnight in order to cook then quickly but there is probably no need to do so with red lentils.
