Prep time: 10 mins
Cooking time: 3 hrs
You Will Need...
1 Tbsp oil
1 jar Rendang Paste
1kg beef, cut into 3cm pieces
400ml coconut milk (1 can)
200ml water
Method
1. Preheat oven to 160ºC/Fan 140ºC/Gas Mark 3.
2. Heat 15ml oil in a large heavy-based saucepan on a medium heat.
3. Add the paste and stir for 2 mins or until fragrant.
Add the beef and cook for a further 4-5 mins or until the meat is browned on the outside.
4. Pour in coconut milk and 200ml water.
5. Cover and cook in the oven for 2 hrs 30 mins, stirring occasionally.
Remove lid and return to the oven for a further 30 mins.
Do not reheat.
Serve with rice.
