Chorizo Risotto
Serves 4
Ingredients
- 1 tbsp Oil
- 200g Chorizo, peeled and chopped
- 300g Redondo risotto rice
- 2 tbsp White Wine Vinegar
- 400ml M&S Chicken Stock, heated
- 200g Frozen Peas
- 60g Italian Hard Cheese, finely grated, plus extra to serve
- Salt & Pepper (to taste)
Hob Method
1. Heat the oil in a large frying pan, fry the chorizo until crisp. Remove the chorizo leaving the oil in the pan.
2. Add the rice to the pan, stir well then add the vinegar. Stir for a further 1 min.
3. Add the stock 100ml at a time, stirring until all the liquid is absorbed and the rice is almost cooked. It should take approx. 20 mins.
4. Stir in half the chorizo, the peas and italian hard cheese.
5. Season to taste, then serve and top with the remaining chorizo and italian hard cheese.
