Baked Egg Rancheros with Crusty Bread

You Will Need...
2 tbsp olive oil, 1 red onion, sliced, 1 courgette, sliced, 1 red pepper, diced into chunks, 1 yellow pepper, diced into chunks, 3 garlic cloves, peeled and crushed, 2 tsp smoke paprika, 1/4 tsp chilli powder, 1 jar roasted red pepper paste, 4 large eggs, 2 tbsp natural yogurt, handful chopped flat leaf parsley & 1 baguette or ciabatta, warmed.
Method
1. Using a large ovenproof frying pan, heat the oil on a high heat, add the veg and cook until softened.
2. Reduce to a medium heat, add the crushed garlic, smoked paprika and chilli powder and cook for 2 mins.
3. Add the full jar of red pepper paste to the pan, keep the jar and half fill with water and add this to the pan, stir well and cook for 2 mins.
4. Make 4 wells in the mixture and crack the eggs into them then bake in a preheated oven at 220°C/Fan 200°C/Gas 8 for 8 mins or until the eggs are set.
5. Once set, remove from the oven, drizzle with yogurt and sprinkle with the parsley and serve with warm crusty bread.
