Our Scottish Peppered Hot Smoked Herring is traditionally hot smoked in Arbroath over oak and beech wood for a medium, rounded smokiness. Each Scottish herring fillet is left skin on and bone in, keeping the flesh juicy and flaky, with a firm bite that stands up to gentle reheating. A finishing of black pepper adds a warm, savoury kick that cuts through the rich, oily character of the fish. Enjoy as it is, flaked into a salad, stirred through pasta with crème fraîche, or piled onto toast with a squeeze of lemon and a scatter of fresh herbs.
