Recipe Suggestion
Roast Tikka Spatchcock Chicken - Serves 4
You Will Need
6 tsp tikka masala seasoning, 1 onion, peeled & grated, 150g natural yogurt, 1/2 bunch coriander, finely chopped, 1 medium chicken, spatchcocked, 1 tbsp vegetable oil
Method
1. Combine the tikka seasoning, onion, yogurt & coriander. Coat the chicken, place on a baking tray & marinate for 1 hour.
2. Pre-heat oven to 210°C/Fan 190°C/Gas 6.
3. Spoon over the oil & place in the centre of the oven & cook for 1 hour 20 mins.
4. Ensure chicken is thoroughly cooked & the juices run clear, serve immediately.
