Chicken Tikka
Ingredients:
1 jar Tikka Paste
1 medium onion, finely diced
700g chicken breast, diced into approx. 4cm pieces
400g chopped tomatoes (1 can)
200ml water (this measures as
1/2 the empty tomato can) 3 tablespoons double cream
Method:
1. Heat 1 tablespoon of oil in a pan on a medium heat. Fry the diced onion for at least 15 mins until softened, caramelised and golden brown.
2. Add the diced chicken to the pan along with the contents of the jar. Fry for approx. 5 mins, stirring occasionally.
3. Add the chopped tomatoes and the water and simmer for 15 mins so that the curry sauce reduces down.
4. Add 3 tablespoons of double cream and simmer for a further 5 mins. Ensure the chicken is thoroughly cooked before serving.
Why not try:
For a vegetarian alternative, use butternut squash and chickpeas.
