Preparation instructions
Remove the claws. Twist the tail section away from the head to separate. Turn tail over and using scissors snip up either side of the shell between the legs. Remove the claws using a sharp knife. Using the back of a sharp knife or shellfish crackers, break the claw and knuckle sections and gently remove the meat.
