Raspberry & Lemon Scones
Preparation Time

Ingredients
250g Organic Self Raising
White flour
2 tbsp caster sugar
100ml milk
100g cold unsalted butter, cubed
1 medium egg, beaten
100g frozen raspberries
1 lemon, zested + 1/2 juiced
1/2 tsp baking powder
50g white chocolate, melted
You Will Also Need
Mixing bowl, rolling pin, parchment lined baking sheet and pastry brush
Method
1. Heat the oven to 200°C / fan 180°C / gas 6. Mix the lemon juice and milk in a jug and leave to stand for 5 mins to thicken.
2. Mix the flour and baking powder in a large mixing bowl and add the butter. Rub between your fingers to mix the butter into the flour until it looks like breadcrumbs. Stir in the sugar, lemon zest and frozen raspberries.
3. Add the milk to the bowl, and mix with a cutlery knife until it forms a rough dough. Tip onto a floured work surface and fold the dough over itself a few times to bring it together, but don't knead it. Flatten the dough until it is a round, about 4cm thick. Cut the disc of dough into 8 sections with a sharp knife and transfer to a parchment lined baking sheet.
4. Brush the tops with egg wash and bake for 20-25 mins until golden and well risen. Leave to cool on a wire rack. Drizzle with the melted white chocolate and leave to set for 10 mins before serving.
Recipe Tip
For classic scones, swop out the raspberries for 75g sultanas and omit the lemon zest.
