Serving suggestion: For a simple take on a Mont Blanc, loosen the chestnut purée with the juice of half a lemon. Whip double cream with a dash of vanilla extract until soft, then spoon over a meringue nest. Add a generous dollop of the chestnut purée and finish with a fruit compote.
