Preparation and Usage
To rehydrate: soak mushrooms in 300ml of boiling water. After 30 minutes, remove the mushrooms with a slotted spoon and cook before eating. If using the soaking liquid as a stock, let it settle and pour off gently leaving any sediment behind.
A recipe for change
For a quick and fragrant broth, soak the mixed mushrooms in 1L of vegetable stock. Add the mushrooms to a saucepan and gently pour in the stock (leaving any sediment behind) then add soy sauce, grated ginger, finely sliced garlic and a spoon of miso paste. Bring to the boil and simmer for 1 minute. Add finely sliced carrots, spring onions and some cooked lentils to the pan then simmer for a further minute.
Serve and enjoy, with a squeeze of lime and sprinkling of fresh coriander.
Recipes
For sweet and sticky mushrooms, soak Dried Mixed Mushrooms in boiling water. In a wok, heat sesame oil and fry strips of aubergine until soft. Add drained mushrooms to the pan, keep the soaking liquid. Mix agave syrup, rice vinegar, lime juice, chilli, garlic and ginger with a splash of the soaking liquid and add to the pan then reduce slightly. Pile into a bowl with rice noodles and vegetables. Top with peanuts, coriander, lime juice and red chillies, serve and enjoy!

Merchant Mixed Dried Mushrooms
Bought these this week, soaked them for 30 mins in boiling water as instructions first, and put them in a soup. Have been using dried mushrooms for years. These were disgusting, unchewable. Like rubber.
Adds flavour
Gives a mushroom risotto a bit more depth. Thid is a quality mushroom mix that hydrates back to identifiable good-sized pieces. Only knocked off a star because they were a little tough but that could just be my cooking.
Great additive
Add to any dish to give it extra flavour.
Tasty mushroom mix and So convenient
Good to have mushrooms so handy & of course they keep well. I grind a few & store the powder in a small airtight jar to use as a seasoning when extra flavour's needed. Have also found the powder but especially the rehydrated mushrooms add a nice savoury almost smoky depth of flavour to vegetarian meals that would usually contain bacon.
