Simple to prepare
To rehydrate: soak mushrooms in 300ml of boiling water. After 30 minutes, remove the mushrooms with a slotted spoon and cook before eating. If using the soaking liquid as a stock, let it settle and pour off gently leaving any sediment behind.

A recipe for change
For a quick and simple mushroom pasta, cover the Porcini Mushrooms in boiling water and leave for 30 minutes. Fry some sliced leeks, garlic and chestnut mushrooms in oil until caramelised, add a teaspoon of flour and mix then a splash of white wine. Remove Porcini Mushrooms with a slotted spoon and add to the pan along with the stock, being careful to leave any sediment behind, bring to a simmer to thicken. Add freshly cooked tagliatelle to the pan and a sprinkle of chopped tarragon. Serve and enjoy.

Delicious tasty mushrooms and makes a lovely earthy broth to use in pastas etc. There is a bit of grit in there but that might be the case for all dried mushrooms

allergy?
We both had a slightly allergic itchiness reaction and my lip swelled. The M and S version didnt cause any reaction two weeks ago. I checked to see if they were all correctly tubed under the cap rather than gilled- seemed ok, but some bits were low in porcini smell. Unsure so binned rest.

earthy and tempting!
as soon as you add water, the whole kitchen is infused in these lovely earthy aromas. We use it in ragu, for our lasagne!! delicious
