Preparation and Usage

Serving suggestion: For a hearty mushroom risotto, sauté chopped onions, garlic and chestnut mushrooms until soft. Add the soaked and drained Porcini Mushrooms, thyme leaves and risotto rice. Mix the soaking liquid with vegetable stock, then add to the risotto pan a little at a time until the rice is fully cooked. Sprinkle with parmesan and extra thyme.

Preparation instructions:
To rehydrate, soak in 300ml of boiling water for 30 minutes then drain and cook in your favourite recipes. The soaking liquid can be used as a flavourful stock, however should be strained before use.

Recipes

A recipe for change
For a warming mushroom risotto, soak Dried Porcini Mushrooms in boiling water. In a large pan, fry chopped onions, crushed garlic and sliced mushrooms in a splash of oil until soft. Mix the drained Porcini Mushrooms, thyme leaves and risotto rice into the pan and cook for a few minutes, keeping the soaking liquid. Mix the liquid into vegetable stock and add a ladle at a time to the risotto pan until absorbed and rice is cooked. Sprinkle with vegan parmesan, serve and enjoy!
