History
The story of Saint Vincent goes back to the days of the Roman Empire, but it was in the Middle Ages when winegrowers chose Saint Vincent as their patron saint to represent them socially and religiously. Legend has it that Saint Vincent was chosen because the first syllable of his name is none other than “vin”, the French word for wine. Saint Vincent's day is 22 January, the traditional day for the start of pruning.

Regional information
The Sauvignon grapes are harvested from vineyards situated in the Entre-Deux-Mers region in Bordeaux. Bordeaux is the largest vineyard for appellation wines in the whole of France. Situated in the South West near the Atlantic, it is crossed by the Garonne and Dordogne rivers and enjoys a temperate maritime climate
Tasting notes
This elegant, dry white has delicate aromas of citrus fruits and cut grass typical of the Sauvignon Blanc grape. The palate is dry and zesty with grapefruit and citrus flavours. It is great as an aperitif or served with seafood or light chicken dishes.

Vinification details
Following the strict selection of the best vineyard parcels in the area, the grapes are harvested and sorted. The grapes are crushed and the juice and skins are left to macerate at controlled cold temperatures to extract flavour and aromas. Following this, traditional fermentation takes place. The wine is aged in stainless steel tanks before being bottled
