Quick & Yummy Recipe
Tortellini Pesto Salad
Ingredients:
- 250g Mr Organic Mushroom Tortellini
- 2 handfuls of fresh baby spinach
- 200g cherry tomatoes, cut in halves
- 130g Mr Organic Basil Pesto
- 1 tablespoon lemon juice
- 2 tablespoons nutritional yeast (optional)

Method:
1. Start by washing the spinach and the tomatoes, then cut the tomatoes in half.
2. In the meantime, cook the Tortellini according to instructions.
Drain and rinse.
3. In a large bowl combine the Tortellini with the spinach & the tomatoes, then mix in the Mr Organic Basil Pesto & drizzle with the lemon juice.
4. Transfer to a serving dish and finish off by sprinkling nutritional yeast on top. You're ready to serve.
