Tortellini Minestrone Soup
Ingredients:
250g Mr Organic Vegetable Tortellini
1 tablespoon Mr Organic Extra Virgin Olive Oil
1 medium onion, minced
1 tin Mr Organic Chopped Tomatoes
1 tin Mr Organic Cannellini Beans
2 cups spinach, roughly chopped
3 garlic cloves, minced
120ml vegetable stock
Salt and pepper
Method:
1 Prepare the tortellini according to instructions. Drain and rinse.
2 Add oil and onion to a pan over medium heat & cook until the onion becomes translucent.
3 Pour in the chopped tomatoes & season with salt and pepper. Simmer for 3-4 minutes, sprinkle in the garlic and spinach, add the stock and cook for 2-3 minutes. Remove from heat, cover and set aside.
4 Add the cooked Tortellini as well as the drained beans and stir to combine. To serve, drizzle some olive oil and viola! Enjoy!

Nice
Very nice, the filling is a little on the bland side but with a flavorful sauce they're perfect, great texture.

I love these, best vegan stuffed pasta i've found. perfect with a good tomato sauce and nooch. I wish they were cheaper but nice for a treat.
Nice
These cooked really nicely are soft and are better then most brands of Tortellini. There is a strong smell to them, but hardly any taste when eating them. Only issue really is price. Way to expensive. I really wish vegan and gluten free stuff was the same price as the non options.. it's not fair that we have to pay more. Most of us have health conditions and have no other choice but to eat this stuff.

Love this with the vegan pesto. Quick easy meal. always like to have one in the cupboard for a lazy dinner.

Easy quick and filling lunch for two. Add pesto or tomatoes or whatever you like, would suggest something with moisture as they arent exactly juicy. Worth a go
