The olives are processed within 24 hours of harvesting and cold extracted at temperatures not exceeding 27°C. The result is a powerful, full-bodied olive oil with aromas of fennel, artichoke, pepper and hay, rich vegetal notes and Coratina's distinctive peppery, lingering finish.
