Recipes

Thai Salad Dressing: Serves 4
You will need:
2 tbsp Thai Taste Fish Sauce
2 tbsp Thai Taste Palm Sugar
3 limes, squeezed
3 garlic cloves, peeled
15g coriander leaves
1 bird's eye chilli - add an extra one for more heat

1. Using a pestle and mortar, pound the coriander leaves, chilli and garlic into a paste.
2. Add the Thai Taste Palm Sugar, Thai Taste Fish Sauce and lime juice. Stir until the sugar has dissolved.
The dressing should have a sweet, sour, hot and salty flavour. Ideal with Som Tam (Green Papaya Salad with Prawns) or Yam Ruam (Seafood Salad).

Tips: Prepare this dressing no more than 2 hours before serving, as the flavours will dissipate with time.
