Based in the Po valley near Parma, the Valserena farm was first established in 1979, and to this day they have preserved the old traditions for making parmesan, mixing the previous evening's milk with the morning milk collected from their own herd. The cows, a rare breed of Brown cow, are born in the farm and live a happy life. Their high standard, varied diet consists of only what is grown in the farm, and this shows in the rich yellow colour and taste of the cheese. Valserena puts quality before everything else: the Brown cow produces far less milk than other milking cows, which yields only nine wheels of cheese a day, but the milk itself is truly extraordinary: richer, fattier and full of nutrients. The final result is truly magnificent: a deeply rich and sweet parmesan, with an incredibly creamy and moist texture.

Was expecting a more punchy flavour. Would not pay this much again, cheaper is better with more flavour.
Excellent aged Parmesan
Since Ocado / Waitrose dont seem to supply the Collo organic Parmesan anymore ( which is by far one of the best) we tried a few and my youngest said they all tasted of cheddar! Except this one.. and I agree. Although expensive its flavour is as good and in fact stronger than the Collo one and it really is fantastic. Also seems to last forever in the fridge without going moldy . Buying more while still on offer! Recommended.
This is just too good. It arrived yesterday and Ive ordered another piece already whilst on offer.
Just cheese rind
I ordered this cheese for the second time. First time it was OK, but second time the piece I received was just rind... So I paid 15GBP for a piece of rind i could not eat.
Expensive but incredible taste
I am a parmesan fiend and go through bricks of it so quickly. This is very expensive but is currently bankrupting me because I love it so much. Even better (although more expensive) than I can get in Borough Market
Undoubtedly this costs a little more, but is the best Parmesan I have ever tasted. I certainly won't be buying anything else.
