Our fresh peas from the UK and Denmark (dependent on harvest) are picked young for peak flavour. Can you eat fresh pea pods? You can boil these pods to make a delicious vegetarian stock. How to cook with fresh peas Blanched quickly, then plunged into ice water, these peas keep their sweet flavour and are delicious sprinkled over ricotta with lemon zest and torn mint for a summer salad.
