Borlotti beans, grown outdoors by minimum intervention farmers in Sicily, are prized for their smooth, creamy texture and nutty, slightly sweet flavor. As temperatures rise later in the season, we also source from growers around Roero, Piedmont. These beans are known for their striking fuchsia-dappled pods (inedible) that hold white beans with pink markings, which fade during cooking.
