- Taleggio from Caseificio Taddei in Fornovo San Giovanni, Bergamo.
- Four generations of the Taddei family have preserved the region’s traditional cheesemaking processes.
- A geographically protected cheese, the cow's milk is sourced from certified, local farms, giving the cheeses their unmistakable taste and fragrance.
- The whole process is managed by expert cheesemakers, from processing the milk and pouring the curds into the moulds to salting, cleaning and ageing.
- The ageing period lasts for 60 days. The rind is sponged with brine throughout to promote the growth of B.Linens. This bacteria helps break down the cheese from the outside in, resulting in a soft texture throughout.
