Recipes
Creamy Veggie Potato Curry
Ingredients
1 can 400ml coconut milk
Coconut oil, for cooking
1 large potato
1 shallot
2 tsps curry powder, milk
70g green beans
1/2 courgette, chopped
100ml vegetable stock
Fresh coriander, to finish
Coconut chips, to finish
Directions
1 Finely chop shallot and pop into a large saucepan with 1 tsp coconut oil. Fry until soft
2 Chop the potato into small cubes, then add to the pan along with the curry powder
3 Pour in the coconut milk, bring to the boil, then reduce the heat to a gentle simmer. Stir continuously so that all the spices mix in nicely
4 Add the green beans and courgette and give it all a good stir. Pour over the vegetable stock, pop a lid on and leave to bubble away for around 25 mins
5 Spoon into deep bowls, add a sprinkling of coriander and coconut chips. Enjoy!
