Ingredients
1 can 400ml coconut milk
Coconut oil, for cooking
1 large potato
1 shallot
2 tsps curry powder, milk
70g green beans
1/2 courgette, chopped
100ml vegetable stock
Fresh coriander, to finish
Coconut chips, to finish
Directions
1 Finely chop shallot and pop into a large saucepan with 1 tsp coconut oil. Fry until soft
2 Chop the potato into small cubes, then add to the pan along with the curry powder
3 Pour in the coconut milk, bring to the boil, then reduce the heat to a gentle simmer. Stir continuously so that all the spices mix in nicely
4 Add the green beans and courgette and give it all a good stir. Pour over the vegetable stock, pop a lid on and leave to bubble away for around 25 mins
5 Spoon into deep bowls, add a sprinkling of coriander and coconut chips. Enjoy!

revolting and full of extras
This was not coconut milk. I had to throw out my curry and start again - revolting and full of weird additives
Best Coconut Milk I have tried
Beautiful and thick, does not separate like most coconut milk and 75% coconut which is more than most of the others and a competitive price, it has ruined all other coconut milks for me, this is all I want in my cupboard!

Premium quality coconut milk!
Excellent coconut milk, the best I have found in a supermarket! With 75% coconut extract, which is very high compared to leading brands like Blue Dragon at 56%, it is rich and creamy, with a slight thickness (coconut milk based sauces tend to be thinner) than most other brands! Definitely recommend. Delicious.

Creamy and delicious, doesnt ever separate in the can. Leagues ahead of any other coconut milk. I use it in many different dishes and its superb.
