Nonya Secrets curry pastes and sauces are inspired by the flavours and aromas of the Southeast Asian cuisine that Maureen, Founder and chef absorbed during her childhood in Singapore. Handmade to exclusive family recipes that have been perfected during 30 years of cooking at her 5 restaurants in London and now bottled for use by both the amateur and seasoned home cooks.

The Secret to a delicious Thai curry is a curry paste that’s made with fresh ingredients without any artificial additives or chemical preservatives and so taste homemade. Nonya Secrets curry pastes are all made following this ethos. The sauces are cooked and seasoned so you can produce a meal in minutes with minimal effort. Simply add your choice of meat, chicken, fish or vegetables to the sauce and a can of rich coconut milk to make a quick and delicious meal. If you prefer to do a quick stir-fry just add a spoonful of the sauce to give depth of flavour to your ingredients. You can also use it as a marinade to create a dish for a barbeque.


Our Red Curry Mix, an authentic Thai recipe, proudly displays a Great Taste 2 Star Award 2024 - 'A bright, zingy paste. It is wonderfully fragrant and has a great punchy heat. It is very well balanced and is seasoned well. There is a great depth of flavour with citrus notes coming through from the lemongrass and lime. The taste is very natural and fresh'.

Thai Red Chicken Curry
Serves 4


Ingredients


600g skinless chicken breast, thinly sliced
1 jar Nonya Secrets Red Curry Mix
400 ml can rich coconut milk (minimum 70% coconut extract)


Combine all the ingredients in a saucepan and bring to the boil. As soon as it has reached boiling temperature, stir and reduce to medium heat and continue to cook for a further 15-20 minutes. When ready to serve, transfer to serving dish. Garnish with a few slices of fresh red chilli and finely shredded lime leaves. Delicious with steamed jasmine rice or noodles.


Over the years I have created new dishes using my sauces in different ways and my favourite dish using the Red Curry is Homok, steamed fish in banana leaves.

Thai Red Fish Curry in 8 minutes
Serves 2


Ingredients
300g White fish - cod, hake or monkfish fillets cut into chunks
½ Jar of Red Curry Mix
200ml coconut milk


Combine the fish, Red Curry paste and coconut milk in a saucepan. These ingredients can then be cooked on a gentle heat for 8-10 minutes or until the fish turns opaque and is cooked.
